From Alba to Bergamo to Rome to Sicily, Chef Chris Brown has eaten and cooked all over Italy. For close to half a decade he honed his skill-set, heading to the market at the crack of dawn to gather what he needed for that day’s service. He learned local specialties, traditional fare and most importantly family recipes from Nonas across the country.
In Bologna, Chris was the sous chef in a small kitchen where just himself and the owner/chef cooked. In their second year, the restaurant received their first Michelin star.
